Healthy chocolate brownies
I recently spent some time in Costa Rica, on a plant based cooking retreat. Healthy chocolate brownies were just one of the many awesome recipes I learnt and which I’d like to share with you now. There are of course many more delicious recipes to write about, so keep popping in…
What makes these heavenly healthy chocolate brownies so special is that are made without sugar, dairy or flour.
They are so easy to make and so delicious as a snack, in a packed lunch box or enjoyed as a desert with cashew nut yoghurt or other dairy free alternative like coconut yoghurt or coconut ice-cream.
The ingredients are simple:
1 tin of black beans or 1.5 cup of cooked black beans
1/3 cup maple syrup
1/4 cup coconut oil
1/4 cup gluten free oats
1/4 cup cacao powder
3/4 tsp baking powder
Whats the method? Easy, blend it all in a food processor and pour into a tin. Bake for 15 minutes at 180 degrees and leave to cool. I actually like to make mine in mini muffin shapes but you do as you like!
Oh and by the way – when you make them and offer them to a friend, its best not to give away the secret ingredient of black beans before they taste them! It can put a twist on the way they experience them!
